This oil is obtained by smashing in cold
with stone grinding and therefore without
chemical or termic intervention that can
produce alterations to the properties of
the biologically cultivated olives. Selected
and collected by hand during October and
November, the fruits are brought to the
smashing in the next 24/36 hours from the
collection. Our oil is sweet and only a
little bit sour, brilliant, with a golden
yellow color with warm green reflects.

| The "extra
virgen" denomination indicates an acidity
less than 0,6%. This makes the oil tasty,
healthy and natural. In fact the fat of the
"extravirgen" olive oil is exacltly
like that which is found naturally in mother's
milk: more digestible,lowers cholesterol by
not settling in the arteries, and prevents
heart atacks and heart disease. Conserve it
in a fresh and dry place and protect from
the direct light. |

The
IGP (Indicazione Geografica
Protetta) brand
The term "Indicazione Geografica Protetta"
(IGP), traduced "Protected Geographical Indications",
together to "Denominazione d'Origine Protetta"
(DOP), traduced "Protected Origin Denomination",
has been introduced by the communitary normative
with the regulation (CEE) n. 2081/92. At the base
of the "Denominazione d'origine" resides
the concept of quality as a warranty of the origin
and type of product due to geographical and human
factors. The products that obtain the benefit
of the origin denomination must be in conformity
with a Production Control, that describes the
characteristics, the production process and the
controls that take place to warranty the quality.
